Cooking With Bourbon Mon, Nov 18, 24 | spirits blog by Robert Giles I have found that not only is Bourbon a fantastic spirit to sip on or use in cocktails, it is also an amazing way to take many recipes to the next level of greatness. The main thing to remember when cooking with Bourbon is that a little goes a long way and you should use good quality but not top shelf. Here are a few recipe suggestions for additions and substitutions to take that next step on flavor. Pecan Pie Replace the vanilla extract with a vanilla heavy Bourbon. Caramelized Onions When your onions have cooked down and are at their desired caramelized color, de-glaze your pan with just a splash of Bourbon. Continue cooking until the liquid has evaporated. Here I like to use Bulleit or Knob Creek. Adult Peach Bourbon Sundae Super easy! Sauté slices of fresh peaches; when tender and juicy, toss with brown sugar and baking spices. Remove from heat and stir in desired amount of Bourbon. Wild Turkey 101 and Four Roses work great here and the peaches go great over ice cream or yogurt. Maple Bourbon Bacon Bring ¼ cup maple syrup and 3 tablespoons of Bourbon to a boil in a saucepan and let cool. Line a baking sheet with parchment paper and bacon. Bake the bacon at 350 degrees for 10 minutes. Remove from oven and brush with maple Bourbon; continue cooking for about 10 more minutes or until bacon reaches desired crispiness. Use Maker's Mark for a lighter flavor or Woodford Reserve for a stronger kick. Bourbon Brown Sugar Sweet Potatoes In the south, it's traditional to top sweet potatoes and sweet potato casserole with brown sugar. Toss your brown sugar topping with a splash of Bourbon before topping the tubers for an extra treat! I use Elijah Craig for a little oaky note and Old Tub for a sweeter vanilla kick. These are just a few examples of ways to add a little kick to your recipes with some good everyday Bourbons.
