Aged 9 months in used bourbon barrels. Fermented with “Prise de Mousse” champagne and wild yeast. Nose of baking spices, cooked agave, vanilla, pepper and light caramel. Palate follows the nose and has notes of butterscotch, vanilla bean, and some smoke. Smooth!
